Carol Ann Lyon, of Quitman, Texas, passed away at home on August 5, 2025 at the age of 76.
Carol was born on September 25, 1948, in Los Angeles, California, to Stanley and Delores (Wollner) Mitchell. She spent much of her life caring for others—both as a dedicated homemaker and during her time working with Walmart.
Above all else, Carol loved her family. She poured her heart into being a wife, mother, grandmother, and great-grandmother, and found her greatest joy in spending time with her grandchildren, who lovingly called her Gigi or Grandma. Whether she was spoiling them with love or simply enjoying their company, her love for them was boundless and unwavering.
On December 31, 1992, she married Ken Lyon. Together they built a life filled with laughter, loyalty, and deep affection.
Carol was also an animal lover and took immense joy in her dogs—Nellie, Duke, and Willie—who brought her comfort and companionship over the years.
She will be remembered for her fierce love, her generous heart, and the many warm memories she created with those lucky enough to know her.
Carol is preceded in death by her parents, Stanley and Delores Wollner Mitchell; and two pups, Heidi and Timmy.
Left to cherish her memory is her husband of 33 years, Ken Lyon; children, Amber Jaramillo and husband Gilbert, Mica Wilson and husband Casey, Nicholas Barnett and wife Shannon, Norm Lyon and wife Marcie, and Kristopher Lyon; grandchildren, Ethan and wife Veronica, Lexie and husband Christopher, Laci, Mya, Aaron, Daylen, Calista, Brissy, Zoey, Olive, Jax, Ayden, Dagan, Coehyn, Kai, and Gus; great grandchildren, Hayze, Everli, Rowyn, and Colson; brother, Bobby Mitchell and very special sister-in-law, April; brother, Kenny Mitchell and sister-in-law Cindy Mitchell; and very special niece, Jenny Johnson and her family.
